Resumen : The present research project was carried out with the objective of knowing the influence that ancestral gastronomy has on cultural tourism in the San Vicente canton, as well as determining the gastronomic offer that is considered ancestral and prevails within the canton through criteria that were determined by the applied research methods and finally formulating strategies for the recovery and promotion of ancestral culinary practices. For the purposes of problematic development, the following question was raised: What is the influence of gastronomy on ancestral in the cultural tourism of the San Vicente canton? for which, through the application of research methods such as content analysis and field research using as investigative techniques the bibliographic review, interview and observation sheets, it was possible to obtain optimal results that contributed with significant information for the fulfillment of each one of the objectives set out in this investigation, likewise it is worth mentioning the development of skills in the collection of information from researchers as future professionals. It was possible to identify a significant influence of ancestral gastronomy on cultural tourism, which is profitable to apply as a development axis. cultural tourism within the San Vicente canton, likewise through the participation of key informants, strategies were developed that will strengthen the result obtained.
Descripción : El presente proyecto de investigación se llevó a cabo con el objetivo de conocer la influencia que tiene la gastronomía ancestral sobre el turismo cultural en el cantón San Vicente, así mismo determinar la oferta gastronómico que es considerada ancestral y prevalece dentro del cantón a través de criterios que fueron determinados por los métodos de investigación aplicados y finalmente formular estrategias para la recuperación y promoción de las prácticas culinarias ancestrales.
