Abstract: The Agua Fría sector has always identified itself as the cradle of the original artisanal brandy, highlighting Junín as a strong canton in agricultural practices and empirical processing of its crops, a practice that has been well performed by the inhabitants of this community with great identity and pride for the creation of the popular Manabi curriccho. This text aims to identify the safety shortcomings that exist in this artisanal activity and then determine through an inductive analysis model the main infrastructure needs required by the sugarcane growers of Agua Fría, the production difficulties in reference to the land to be implemented in a project and the most visible opportunities that welcome the formulation of a collection and processing center for sugarcane. As a result of the research thanks to the approach with the territory, field tour it was found that, due to the deficient planning of the procedure due to the lack of optimal space, the economy of the sector is little fluctuating since the sales of the final product are made only in the same community, which generates a poor vision when undertaking outside the canton and thus generate more income. In response to the problem, the design of an architectural project that responds to the specific needs of the production of spirits on land owned by the community of sugarcane growers is proposed.
Description: Este texto pretende identificar las falencias de inocuidad que existen en esta actividad artesanal para luego determinar mediante un modelo de análisis inductivo las principales necesidades de infraestructura que requieren los cañicultores de Agua Fría, las dificultades de producción en referencia al terreno a implantar un proyecto y las más visibles oportunidades que acogen la formulación de un centro de acopio y procesamiento de la caña de azúcar.
