Abstract: The present investigation was carried out due to the little existing information regarding the nutritional values of chicken meat, as well as the differences that exist between the variable taste, color, smell and texture, which will be measured in the investigation. in which the following lines of chickens and their respective diet will be used; Broiler chickens will be fed with commercial balanced feed, Creole chickens will be fed behind the patio, the Pio pio feed was semi-technified just like free-range chickens. The tool used to obtain the results was SPSS, for which two surveys were carried out in which 20 people participated, qualifying the taste samples with a hedonic scale which ranges from 1 the lowest to 7 the highest range of liking, the data obtained is called Multiple Correspondence Analysis (MCA), by obtaining data it was determined that the T3B_Criollo treatment outperformed the other treatments in three variables; Color, Smell and Taste, while in the Texture all the treatments are similar.
Description: La presente investigación se llevó a cabo en el Cantón El Carmen y tiene el objetivo determinar la cálida de la carne de pollo alimentados por diferentes fuentes nutricionales, así como las diferencias que existen entre el variable sabor, color, olor y la textura, las cuales serán medida en la investigación en las cuales se utilizarán las siguientes líneas de pollos y su dieta respectiva; los pollos Broilers serán alimentados con Balanceado comercial, los pollos criollos su alimento será tras patio, la alimentación de los Pio pio fue semi-tecnificada al igual que los pollos camperos.
