Abstract: The present research work was carried out at the Eloy Alfaro Lay University of Manabí, El Carmen canton in the province of Manabí, which had the general objective of determining the quality parameters of chifle according to the age of the green banana (Mussa paradisiaca), the The methodology used was a sampling where green bananas of 9, 10, 11,12, and 13 weeks of age will be taken from the crop, the statistical analysis to be used is a DCA, where the Chi Square statistical test will be used, through the statistical package of infoStad 2002, The results obtained for the yield variable where the best age of the cluster for the preparation of the snack was week 12, obtaining a superior yield with 34.15%, in a cooking time of 5 minutes at a temperature that It is around 130°C to 140°C, this being the ideal one to make the banana snack, according to the surveys carried out, it was possible to notice that the people who tasted and observed the snack k of the banana, having a response that the color is 65% yellow, it is concluded by mentioning that research must be carried out on this topic and thus be able to have verified data to manufacture the snack with a higher percentage of performance and profit to the producers that give added value to the banana.
Description: El presente trabajo de investigación se desarrolló en la Universidad Laica Eloy Alfaro de Manabí, cantón El Carmen de la provincia de Manabí la mismo que tuvo por objetivo general determinar los parámetros de calidad del chifle según la edad del plátano verde (Mussa paradisiaca), la metodología utilizada fue un muestreo donde se tomarán plátano verde de 9, 10, 11,12, y 13 semanas de edad del cultivo, el análisis estadístico a utilizar es un DCA, donde se utilizará la prueba estadística de Chi Cuadrado, mediante el paquete estadístico de infoStad 2002.
