Abstract: The purpose of this study is to determine the amount of nitrite and nitrate found in barbecue sausages of the 3 multinational and local trademarks sold in the city of Manta. The analyzes were carried out in the laboratories of INSPECTORATE DEL ECUADOR S.A. The results indicate that all trademarks have concentrations within the limits admitted by INEN and Codex Alimentarius. The Fraile brand was the one with the highest concentration of nitrite and nitrate with 27 mg / kg and 78 mg / kg respectively. In the same way it does not exceed the allowed limits. It should be noted that the consumption of sausages is harmless to health, in the same way it should be moderate, mainly to avoid complications in health.
Description: El presente estudio tiene como objetivo determinar la cantidad de nitrito y nitrato que se encuentran en los chorizos parrilleros de las 3 marcas comerciales multinacionales y locales que se venden en la ciudad de Manta. Los análisis se los realizo en los laboratorios de INSPECTORATE DEL ECUADOR S.A.
