Abstract: Ecuador is a country with a high agricultural production, of which plantain is one of the main responsible for the national and international demand. Products derived from plantain are used in most of the country's typical dishes; therefore, the demand for this product has led to significant growth in the local snack sector. This project aims to develop a successful business model with business management criteria to ensure the marketing of fried foods in the parish Tarqui, the methodology used in the development of the project were documentary research methods, exploratory - descriptive. In addition to techniques such as the survey. The methods and techniques were applied to the chifles traders of the Tarqui parish, from which a sample of 52 traders was taken, giving as a result that most of the chiflerias do not have administrative and production processes, so that their profits are only enough for the day to day. Therefore, administrative and production processes are proposed in the company Casa de Frituras, in addition to creating a strategic plan according to their needs, which aims at the growth and development of the company in the local market.
Description: Ecuador es un país con una elevada producción agrícola, de la que el plátano es uno de los principales responsables de la demanda nacional e internacional. Productos derivados del plátano son utilizados en la mayoría de los platos típicos del país, por lo que, la demanda de este producto ha provocado un importante crecimiento en el sector de los aperitivos locales.
