Abstract: In the Ecuadorian context, the production of plantain chifle represents a product of wide consumption and commercial value, although it presents a variability in its final yield that is not fully explained in the scient ific literature. For this reason, this research ent itled “Yield of plantain chifle produced, in relation to the type of plantain used” seeks to address this gap in knowledge, specifically the impact that the variety of plantain used has on the qualit y and quantity of the final product. For this purpose, a descriptive ADEVA statistical methodology and quality evaluation will be used. The most relevant results indicate that significant differences (p<0.01) were found between plantain types. The PB (Barraganete plantain) presented the highest yield, followed by PD and finally PH. In conclusion, the PM or Barraganete plantain is the most suitable for chifle production, due to its superior yield.
Description: La presente investigación titulada "Rendimiento del chifle de plátano producido, en relación al tipo de plátano utilizado" busca abordar específicamente el impacto que tiene la variedad de plátano empleada en la calidad y cantidad del producto final. El problema científico identificado en este trabajo es la discrepancia entre la demanda creciente de chifle de plátano de alta calidad y la falta de información precisa sobre la influencia del tipo de plátano en su rendimiento.
