Abstract: | This integrative project aims to address the problem identified in the gastronomy laboratory of the Pedernales Extension: the lack of adequate cookware that allows students to optimally develop their culinary practices. It is proposed to implement quality cookware for the laboratory, to improve the teaching-learning environment and the practical experience of students in the component of the Gastronomy career curriculum. The methodology applied was deductive, starting with a general evaluation of the options available on the market until reaching the final selection of the cookware most appropriate to the needs of the laboratory. The observation technique and the data collection instrument was a form where the characteristics of the laboratory were recorded, including the number of students, the specific needs of the curriculum and the space available for storage. The results present the research on the types of cookware available, considering materials, durability and functionality; the quotation and selection of the supplier, seeking the best quality-price ratio; and the installation of the cookware in the gastronomy laboratory. Finally, a test was carried out to guarantee the quality and correct functioning of the utensils. This project seeks to provide students with the necessary tools to develop culinary skills in a professional environment, improving their training and preparing them for a successful future in the field of gastronomy. |
Description: | Este proyecto integrador tiene como objetivo principal implementar baterías de cocina de calidad en el laboratorio de gastronomía de la Extensión Pedernales para mejorar el ambiente de enseñanza-aprendizaje y la experiencia práctica de los estudiantes. La metodología aplicada fue deductiva, comenzando con una evaluación general de las opciones disponibles en el mercado hasta llegar a la selección final de las baterías de cocina más adecuadas a las necesidades del laboratorio. |
