Abstract: | This study focuses on the implementation of ceramic tableware in the gastronomy laboratory of the Pedernales Extension, aiming to improve the quality of academic practices and align students' training with haute cuisine standards. Through an initial evaluation, the laboratory's needs were identified, revealing the insufficiency and deterioration of the existing tableware. Subsequently, a supplier search and procurement process was conducted at Casa Comercial Pedernales, ensuring the acquisition of appropriate materials for culinary education. The formal delivery in the laboratory included a verification process, inventory registration, and training to ensure the proper use and preservation of the materials. As a result, the implementation of ceramic tableware optimized culinary practices, strengthening the teaching of plating and presentation techniques. It is recommended to maintain equipment control, assess its impact on training, and continue improving the laboratory infrastructure to provide higher-quality education. |
