Abstract: | The project seeks to address the lack of suitable furniture for the Manabita oven at the Pedernales Extension. This makes it difficult for students to carry out traditional culinary practices. With the new furniture, students will be able to learn and apply ancestral cooking techniques, enriching their gastronomic training. The methodology applied was deductive, starting with research on the traditional use of the Manabita oven and the space and tool requirements for its proper functioning. An evaluation of different furniture options was carried out, considering materials, ergonomic design, and adaptability to the laboratory space to finally select the most suitable one. The technique of direct observation of gastronomy students and the instrument of a registration sheet allowed documenting the current conditions of the Pedernales Extension laboratory and the specific needs for the implementation of furniture in the Manabita hut. The results present the research on the types of furniture available for wood-fired ovens, which results in a traditional "choza" (hut) made of "caña guadua" (a type of bamboo), to subsequently carry out the quotation and selection of the supplier that offers the best quality-price ratio, and the furniture installation process in the gastronomy laboratory. It also includes the description of a pilot test with students to evaluate the functionality of the furniture and its impact on the development of practices. This project seeks to optimize the teaching-learning process in the area of gastronomy, providing students with the opportunity to acquire skills in the management of traditional cooking techniques, strengthening their professional training and promoting the conservation of regional culinary heritage. |
Description: | El proyecto busca solucionar la falta de mobiliario adecuado para el horno manabita en la Extensión Pedernales. Esto dificulta que los estudiantes realicen prácticas culinarias tradicionales. Con el nuevo mobiliario, los estudiantes podrán aprender y aplicar técnicas ancestrales de cocción, enriqueciendo su formación gastronómica. |
