Abstract: | This integrated project arises from the need to enrich the practical training of Gastronomy students at the Pedernales Extension. With the objective of implementing a Manabí oven, the goal is to obtain a new gastronomic laboratory that allows students to develop skills in areas of knowledge such as heritage and culinary culture. The research question that guides this project is: Will the implementation of the Manabí oven improve practices in the gastronomy program at the Pedernales Extension? To answer this question, a deductive method was used, starting from the premise that practical learning with traditional tools strengthens gastronomic training. The methodology was based on research and observation in collaboration with experts in the construction and use of the Manabí oven. Traditional construction techniques, materials used, and the particularities of cooking in this type of oven were documented. As a result, a functional Manabí oven was built within the Extension facilities. To evaluate its impact, a traditional Manabí dish was prepared, including "la tonga," an emblematic dish of the region. |

Con el objetivo de implementar un horno manabita, se busca obtener un nuevo laboratorio gastronómico que permita a los estudiantes desarrollar habilidades en áreas de conocimiento como patrimonio y cultura gastronómica. |
