Abstract: This integrative project focuses on the implementation of a four-burner industrial stove in the gastronomy laboratory of the Pedernales Extension of the Eloy Alfaro Lay University of Manabí. This initiative arises from the need to improve the learning conditions of gastronomy students, with the following research question: Will the implementation of the industrial stove with 4 burners improve the practices in the gastronomy laboratory of the Pedernales Extension? Regarding the methodology, the deductive method was used, an observation technique and a form as an instrument where the collected data were recorded. As part of the results, first of all, an exhaustive investigation was carried out on the needs of the gastronomy laboratory and the options available in the industrial stove market. Suppliers' catalogues were consulted, technical characteristics were compared and the opinions of experts in gastronomic equipment were considered. Based on the information collected, the acquisition and installation of the stove was planned. A budget was drawn up, the supplier offering the best value for money was selected, and the installation was coordinated with qualified technical personnel. Finally, a project evaluation was carried out, which included functional tests of the stove and observation of its use in cooking practices. The students now have modern and efficient equipment that allows them to optimize cooking times, diversify culinary practices, and strengthen the quality of learning in the laboratory.
Description: Este proyecto integrador se centra en la implementación de un fogón industrial de cuatro quemadores en el laboratorio de gastronomía de la Extensión Pedernales de la Universidad Laica Eloy Alfaro de Manabí. Esta iniciativa surge de la necesidad de mejorar las condiciones de aprendizaje de los estudiantes de gastronomía, con la siguiente pregunta de investigación: ¿La implementación del fogón industrial con 4 hornillas mejorará las prácticas en el laboratorio de gastronomía de la Extensión Pedernales?, en cuanto a la metodología se trabajó con el método deductivo, técnica de observación y como instrumento una ficha donde se registraron los datos recolectados.
