Resumen : This research is about conducting a gastronomic study of the restaurants of the Manta canton, seeking to know the new post-COVID food trends, Due to the problems related to the little interest of the population in knowing and consuming the new food trends that are implemented in our city. The main objective is to diagnose a gastronomic study oriented to the new post-COVID 19 trends in the restaurants of the Manta canton. The procedures to be carried out were guided by the methods, techniques and tools necessary in an investigation, to collect the pertinent information. We handle scientific methods: observation, theoretical, deductive and analytical analysis, being the most consistent with what has been proposed. In addition, to proceed to carry out the respective surveys and observation files, collecting the necessary information, in its different phases, both primary and secondary, acquiring the required data and completing them with what is established by the experts. The results were in accordance with the expectations that had been observed and confirmed certain deficits regarding a healthier gastronomic consumption in our canton, hoping that current research will be of great help to improve these weaknesses during times of health crisis. To conclude, the results obtained are analyzed, realizing the problems related to the current research and a basic guide is proposed to help Manta restaurants improve their menu with the new post-COVID 19 trends.
Descripción : A través de esta investigación, realizaremos un estudio gastronómico de los restaurantes del cantón Manta, buscando conocer las nuevas tendencias alimentarias post COVID 19, debido a la problemática relacionada con el poco interés de la población en conocer y consumir las nuevas tendencias alimentarias que se implementan en nuestra ciudad.
