Abstract: Thanks to the great openness of tourism, it is possible to conceive of multiple modalities within it; as is the case of gastronomic tourism, which attracts tourists to certain places, there is close relationship between gastronomy and tourism, stating that the first has been taken as a reference to create routes that enhance the typical food of a locality, combining it with the tourist places that it has. This research work is based on the influence of ancestral gastronomy on the tourist development of the destinations, taking as objects of study 2 rural parishes of Portoviejo (Calderón and San Plácido), due to the great natural, cultural and gastronomic resources that both possess, which have not yet been well used by public and private company. A mixed convergent design with two components was used for the research methodology; a quantitative one, where second-hand information was collected with data that already existed on the internet; and another qualitative one, where interviews were conducted with several professionals in tourism and gastronomy. The results obtained on the basis of research were positive as they are entirely consistent with the theory, which can lead to decision-making in the elaboration of future projects highlighting gastronomy as the main resource; and in turn achieve the growth not only tourism but economic and social of rural parishes, making Calderón and San Plácido attractive territories in the eyes of entrepreneurs looking to invest in the development of rural and gastronomic tourism.
Description: Gracias a la gran apertura que tiene el turismo, se logra concebir múltiples modalidades dentro del mismo; como es el caso del turismo gastronómico, que atrae a los turistas a determinados lugares, existiendo estrecha relación entre la gastronomía y el turismo, afirmando que la primera ha sido tomada como referencia para crear rutas que realzan la comida típica de una localidad, combinándola con los lugares turísticos que ésta posee.
