Abstract: The gastronomic routes are an itinerary or route that allows the various flavors of the culinary traditions of the different geographical points grouped in a common purpose, that is why for the realization of this work the objective of developing an ancestral gastronomic route for the tourist and cultural progress in the urban area of the Portoviejo canton. The research was carried out covering the theoretical aspects of the importance of the creation of the gastronomic route for the urban areas of Portoviejo, so to carry out this project we proceeded to visit the different restaurants that preserve ancestral food and I comment on the work to be done, for which the necessary information was provided, it is important to mention that the present work will have as its object of study the restaurants: Quinta Laurita, Andrés de Colón Restaurants, El Fogón, Letty, El tomato, Andrés, Giferza, of which each one of its owners has approved. However, it should be noted that descriptive and empirical methodologies were applied, using the survey technique, which was applied to 100 people randomly, through the online questionnaire instrument through Google Forms, obtaining as a result that restaurants taken as object of study are known by many and that the creation of this route will be accepted, fulfilling the general objective of this work.
Description: Las rutas gastronómicas son un itinerario o recorrido que permite los diversos sabores de las tradiciones culinarias de los diferentes puntos geográficos agrupados en un fin común, es por ello que para la realización del presente trabajo se planeó el objetivo de desarrollar una ruta gastronómica ancestral para el progreso turístico y cultural de la zona urbana del cantón Portoviejo.
