Abstract: The objective of this work was to develop and apply the QIM scheme for the prediction of useful life in the species C. caballus through the most used method, this being sensory evaluation. The collection of the specimens had a total of 45 specimens, eviscerated and located in an isothermal container with ice, the ratio was 1:1 in order to maintain a temperature close to 0°C ± 1.5°C, followed by performed the analysis in the laboratory over a period of 15 days. The MIC developed for C. caballus had a maximum value of 28 points, adjusted to a linear growth model with a statistical behavior of R2 0.9942. The MIC was very useful to determine the deterioration and define the storage and consumption time, the panelists rejected the fish on the sixth day of storage, establishing that they were not suitable for consumption. It is concluded that the QIM sensory method developed for C. caballus stored on ice can be used as a quality assessment system.
