Abstract: | The study looks at how the ancient food of Manabí has caught on in today's cuisine, showing how the customs of the cuisine have been introduced, changed or kept in the dishes now offered in the area. A way of investigating was used that included things such as talking a little with cooks and people who know about food, as well as looking at different restaurants and reading old documents about cooking. It was discovered that things like using the wood fire, with ingredients from there such as peanuts, green plantains, Creole chicken, goat, and fish, and ancient ways of cooking such as wrapping in leaves and using the grinding stone, are still used and changed in the kitchen today. This gives a way of being, a cultural value and something true to the new dishes. This is seen in how the dishes look and in the stories of the cooks in the area who try to remember the food of before Manabí. All told, the old food of Manabí is not only cultural, but it also helps to do new things and make the food of the area stronger. |
Description: | El estudio mira cómo la comida antigua de Manabí ha pegado en la cocina de hoy, mostrando cómo las costumbres de la cocina se han metido, cambiado o guardado en los platos que se ofrecen ahora en la zona. Se usó una forma de investigar que metió cosas como hablar un poco con cocineros y gente que sabe de comida, además de mirar bien diferentes restaurantes y leer documentos viejos sobre la cocina. |
