| Abstract: | One of the inputs that is used in greater volume in the tuna canning industry and mainly in the hygiene and disinfection processes of its processes is drinking water, for this reason the quality of water must be guaranteed and ensured. adequate to put its safety at risk and in turn put hygiene and disinfection programs at risk, the evaluation was carried out with the water used in the productive sector of a fishing company, where the sampling of drinking water and water was carried out. ultrafiltered in summer. |
| Description: | Uno de los insumos que se usa en mayor volumen en la industria de la elaboración de conservas de atún y principalmente en los procesos de higiene y desinfección de sus procesos es el agua potable, por tal razón se debe garantizar y asegurar el agua tenga la calidad adecuada para que ponga en riesgo su inocuidad y a su vez pone en riesgo los programas de higiene y desinfección, la evaluación se la desarrolló con las aguas de uso en el sector productivo de una empresa pesquera, donde se realizó el muestreo del agua potable y agua ultrafiltrada en época de verano. |
