Abstract: This research work aimed to analyze operating procedures manuals of the food and beverage department for the preparation of a copy for Ligüiqui restaurants in the city of Manta. The food and beverage operating procedures manuals are an instructive guide to the processes and activities that are carried out within restaurants, hotels and institutions, by workers to meet the objectives set and provide a quality service. This investigation was justified in determining the need to implement a procedures manual, for this it was important to evaluate the knowledge of workers and managers about the food and beverage operating procedure manuals and if they are put into practice within Ligüiqui restaurants. For the development of this research, several bibliographic sources were analyzed with examples of operating procedures manuals for food and beverages that were found on websites, scientific articles, and codes. In addition, a field study was carried out in the restaurants of Ligüiqui in the city of Manta to verify if within them they are managed with process manuals for the performance of their daily activities. The results obtained served to understand that food and beverage operating procedure manuals are a very important and valuable tool, since they provide the necessary information on how each of the activities are carried out and how to satisfy the customer's consumption needs.
Description: Este trabajo de investigación tuvo como objetivo analizar manuales de procedimientos operativos del departamento de alimentos y bebidas para la elaboración de un ejemplar para los restaurantes de Ligüiqui de la ciudad de Manta. Los manuales de procedimientos operativos de alimentos y bebidas son una guía instructiva de los procesos y actividades que se llevan a cabo dentro de los restaurantes, hoteles e instituciones, por parte de los trabajadores para cumplir con los objetivos planteados y brindar un servicio de calidad.
