Abstract: The present research aims to use alkaline pH solutions as a control of Salmonella spp, Escherichia coli, Botrytis and Rhizopus, in the strawberry (Fragaria x ananassa), which is aimed at submerging the fruit in KOH solutions for the purpose of treatment microbial growth Likewise, the antimicrobial activity at pH was evaluated using the method of diffusion of discs in agar where KOH solutions of pH 11, 12 and 13 are used. According to the results of the present study the solutions at a pH 13 as a control medium in a time of 60 minutes without the presence of bacteria, with respect to fungi a decrease in UPC was recorded as the pH increases.
Description: La presente investigación tiene como objetivo utilizar soluciones de pH alcalino como control de Salmonella spp, Escherichia coli, Botrytis y Rhizopus, en la frutilla (Fragaria x ananassa), el cual se direcciona en sumergir la fruta en soluciones de KOH con la finalidad de evaluar el crecimiento microbiano.
