Abstract

This work analyzes production costs and their economic and financial impact on the Rollwings restaurant in Manta, addressing the problem of inadequate cost management that has negatively affected strategic decision making and profitability. The research uses a mixed approach, combining qualitative and quantitative methods, such as descriptive, analytical and inductive, along with interviews, observations and checklists to identify deficiencies in management and costs.
