Abstract: The study proposes the development of healthy snacks using traditional ingredients from Manabí, such as corn, plantain, sweet potato, cocoa, and peanuts, with the aim of introducing them to the market through the Ruta Latitud Iche. The proposal is based on a descriptive, historical, and field observation methodology, utilizing tools like surveys and comparative charts. Manabí's rich gastronomy, characterized by the use of fresh and sustainable ingredients, is presented as an opportunity to create innovative foods with low fat and sugar content that promote health and preserve cultural heritage. This initiative responds to the growing global interest in healthier food options over processed products. The project aims not only to improve consumers' health but also to boost the local economy and sustain culinary traditions. Additionally, it offers affordable alternatives that contribute to a balanced and nutritious diet, emphasizing the importance of fostering healthy eating habits from an early age and leveraging gastronomic heritage as a key cultural and tourism resource.
Description: El estudio plantea la elaboración de snacks saludables utilizando ingredientes autóctonos de Manabí, como maíz, plátano, camote, cacao y maní, con el objetivo de introducirlos en el mercado de la Ruta Latitud Iche. La propuesta se fundamenta en una metodología descriptiva, histórica y de observación de campo, apoyándose en herramientas como encuestas y cuadros comparativos.
