Abstract: This research was focused on the use of ancestral utensils and their influence on modern Manabi cuisine. Through an exhaustive investigation, we have sought to identify and revalue these traditional tools, such as the wood stove, grinding stone, clay pots, among others, which are part essence of local gastronomy. Through surveys and interviews, information and data were collected on the use of these implements today, for this process, we have considered it pertinent for the owners and managers of the restaurants in Bahía de Caráquez to obtain information on the use of these implements. Many of them consider the importance of using these utensils as essential to maintaining cultural identity; however, they have adapted to modern utensils. This research not only highlights how the use of these elements preserves cultural identity, but also enriches our gastronomic offering, in which the fusion between the ancestral and the modern is used. In addition to generating an economic and social impact from this connection with our gastronomic culture.In addition to proposing the preparation of a manual on ancestral kitchen utensils, fostering interest in our gastronomy among new generations in order to preserve this cultural heritage and its culinary traditions.
Description: La presente investigación estuvo enfocada en el uso de utensilios ancestral y su influencia en la cocina moderna manabita, a través de una investigación exhaustiva se ha buscado identificar y revalorizar estas herramientas tradicionales, como el fogón de leña, piedra de moler, ollas de barro entre otras que forman parte esencial de la gastronomía local, a través de las encuestas y entrevistas se recopilo información y datos sobre el uso de estos implementos en la actualidad, para este proceso hemos considerado pertinente que los dueños y administradores de los restaurantes de Bahía de Caráquez, para obtener información que del uso de estos implementos.
