Abstract: | The present research was focused on the knowledge of the local inhabitants regarding the traditional Manabí gastronomy, since this constitutes an intangible cultural heritage that can enhance tourism in the locality. The objective of the study is that the citizens of this locality recognize the importance of Manabí's traditional gastronomy as a key element in the contribution of tourism. For this purpose, it was considered pertinent that the inhabitants of the town of Pajonal, students of the different careers of the Universidad Laica Eloy Alfaro de Manabí, were part of the study, and as a result, 383 effective surveys were obtained. In the analysis of the results, it became evident that the citizens have a low knowledge about the potential of traditional gastronomy when talking about tourist attraction, although many know and recognize the most typical dishes of the area, few know its importance, origin and that it is a good resource to attract tourists and generate income. In addition, it was concluded that in order for the population to take advantage of the resources they have to develop strategies that strengthen the identity of the region and the sustainability of the locality. |
