Abstract: The present research project entitled ''The Canelazo and its elaboration as an Expression of the Manabita Cultural Identity, Canton Manta'' aims to analyze the evolution of the elaboration of the canelazo in the city of Manta and its impact on the economic and tourist development of the region, this because the Canelazo is a drink that carries a valuable historical significance being its elaboration and consumption representative for the canton because it is prepared by hand with nutritious ingredients in order to provide hospitality to the families that consume it. In order to achieve the objective, the scientific or theoretical method was used to carry out a deductive and inductive study using techniques and instruments of qualitative and quantitative approach to data collection such as interviews, surveys and documentary analysis. As a result of this, it is known that the traditional festivities of Manta are welcomed, in addition to its relation to the prayers, wakes and approach to the weather in different sectors with moderately low temperatures. The traditional technique consists of placing a pot with water over medium heat until it begins to boil, then all the ingredients are added and after a few minutes it goes through a process of fermentation, straining and bottling. It is known that this drink has important benefits for the human body as it is a hot drink that helps to maintain body heat, nutritious as it is also rich in energy, potassium, phosphorus, magnesium and vitamins A and C. A technical sheet was also elaborated where the materials to be used for the recipe, their costs per unit and value per gr used, the cost of raw material and its selling price per serving can be observed.
Description: El presente proyecto de investigación titulado ‘‘El Canelazo y su Elaboración como Expresión de la Identidad Cultural Manabita, Cantón Manta’’ tiene como objetivo analizar la evolución de la elaboración del canelazo en la ciudad de manta y su impacto en el desarrollo económico y turístico de la región, esto debido a que el Canelazo es una bebida que conlleva un valioso significado histórico siendo su elaboración y consumo representativo para el cantón porque es preparado artesanalmente con ingredientes nutritivos con el fin de brindar hospitalidad a las familias que lo consumen.
