La gastronomía ancestral y su comportamiento en el turismo cultural del cantón Rocafuerte provincia de Manabí-Ecuador.

Abstract

The objective of this investigation was to determine how ancestral gastronomy affects the behavior of cultural tourism in the Rocafuerte canton, taking into account various actors involved. To carry out this investigative work, a methodology with a qualitative approach was used, using quantitative tools of a bibliographic and documentary type, which were obtained through the review and analysis of documents such as articles, these and other sources of information, likewise, A field investigation was carried out, and a gastronomic inventory file was applied in order to identify the most representative gastronomic recipes of the canton. Regarding the population, 139 gastronomic establishments or enterprises located in the canton were identified, of which 12 offer ancestral food, in addition, it was considered to apply a survey to tourists (external and local) and an interview with the authorities related to the activity. Tour. Finally, tables and graphs were designed through descriptive analysis where it was known that the ancestral gastronomy offered by the Rocafuerte canton does have an impact on the behavior of cultural tourism, since it represents a complementary potential in tourism and also another source of income. economic, contributing to local development. Given the problem encountered, it was proposed to design a catalog where the ancestral gastronomy of the canton is promoted, which will be shared with the Department of Tourism of the municipal GAD and published on social networks to promote and promote the gastronomic benefits of the Rocafuerte canton.
