Gastronomía ancestral y su influencia en el turismo cultural del cantón Chone parroquia Canuto.

Abstract

The present investigation was carried out with the objective of analyzing the cultural value of gastronomy of ancestral origin, a factor of high tourist impact in the Canuto del Cantón Chone Parish, Manabí province, Ecuador. Place, where there is evidence of a significant loss of identity and little interest given to all the culinary richness that each of the typical dishes of the area has, and the history behind each preparation. For this, it was necessary to make use of a research methodology with a mixed approach, which gives us the opportunity to use qualitative aspects, with the application of instruments that allow observation, exploration, analysis of the problem and quantitative ones for the purposes of an assertive measurement, oriented to results with consistent data that land us in the particular reality of the problem investigated.Thus, finding a high influx of young people, who are unaware of the ancestral practices of local gastronomy and therefore do not manage to measure the high potential that it represents and the great influence it has to increase the tourist dynamics, present in the town. Therefore, itis considered important to expose the situation and promote the appropriation of ancestral knowledge in the gastronomic field and its contribution to the tourism development of Canuto.
