Abstract

Constant training is essential to achieve business excellence in the gastronomy and restoration sector, one of the most important tourism sectors for the economy of any country. This research project aims to design a basic training program to strengthen the quality of the Food and Beverage service in the restaurants of the San Mateo Canton Manta parish. The following research comprises a qualitative approach, by which techniques have been used that facilitate the understanding of the data obtained through its study. By means of the logical historical theoretical method it was possible to collect information from previous investigations that allow us to cover in a more specific way each of the weaknesses of the sector during the process. The results obtained in the analysis process showed that there is interest in receiving training from the people who work in San Mateo restaurants, however, there is a lack of motivation regarding participating in these trainings; there is a contradiction in the values reflected, with what could be observed in the on-site visit. Finally, a training program has been developed on the basis that tourism service providers (food and beverages) need, so they can strengthen their knowledge and motivate them to continue educating themselves on the quality of tourism services.
