Resumen : | The project consists of the evaluation of the food and beverage establishments: Bar Picantería Relámpago and Soda Bar JYS, with the aim of knowing the current situation of both businesses regarding integrated and intelligent management and also the application of good practices. The research is participatory action, likewise, the inductive-deductive method is used and the checklist and survey and interview questionnaires are applied. Regarding the integrated management in the Picantería Relámpago Bar, there are positive aspects such as: relationship with suppliers, quality-price balance and good practices. In intelligent management, there are no weighted as positive aspects, on the contrary, there are deficiencies. In the specific indicators, most are weighted in a good way, except for the resolution of unforeseen events and use of resources that are partially met. For its part, in the Soda Bar JYS business, with respect to integrated management, there are positive aspects such as the balance of the quality-price ratio of the product and the development of processes and activities in the established time. Regarding intelligent management, most of the indicators are negative, as such no positive issues are detected. Regarding the specific indicators, adequate invoicing, order deliveries and product recognition are valued as very good. The proposal of good practices formulated in family businesses contains strategies such as: carrying out mass promotions and advertising, carrying out service quality controls on products, properly classifying waste, among others. |
