Estudio de la gastronomía tradicional del cantón Portoviejo.

Abstract

The culinary traditions of a specific place represent a population and its evolution through time, these changes become a key part of the cultural heritage of a place and how its preservation and its continuous practice can be the source for the sustainable tourism development of a place. Therefore, this writing intends to examine the gastronomic traditions of the city of Portoviejo, for this a qualitive approach was applied with methods such as descriptive, together with analysis and synthesis, in this research the documentary review technique was used for national and international authors, in addition, the investigation had a sample of 5 people all born in in this city. The interview guide was the instrument used to inquire about their gastronomic knowledge. The results showed the conditions the preparations must meet to be considered as a traditional dish and with the help of this indicators it was identified what could be the traditional foods that characterize the place. Therefore, it is concluded that the food culture of a place is very important since it is a representative of identity and can be used for the local development of Portoviejo if the local authorities show the incentives to promote it and protect it for future generations.
