La gastronomía ancestral y su influencia en el turismo cultural del cantón Montecristi, provincia de Manabí.

Abstract

The current investigation consists of diagnosing the impact that ancestral gastronomy has as a contribution to cultural tourism in the Montecristi canton, Manabí province. The methodology used is descriptive, analytical-synthetic methods are used and survey and interview questionnaires are also constructed, the first is applied to tourists and residents, and the interview to local actors. During the development of the investigation it was possible to verify that the Montecristi canton has several historical and cultural attractions, among the most prominent are: Ciudad Alfaro Civic Center, Virgen de Monserrat Church, Pile Community (elaboration of toquilla straw hats). About the most representative ancestral dishes used in restaurants are: Creole chicken broth and dry, baked fish or pork, hose broth, humitas, among others. Likewise, the use of ancestral utensils is used such as: wood oven, mate ladle, clay pots, mill, sieve, among others. Through the survey and interview it is evident that ancestral gastronomy does have an impact on the arrival of national and international tourists who come to this destination. Regarding the satisfaction indicators, both tourists and residents state that there are problems that contribute to development such as: the low generation of jobs and the limited diversity of attractions and tourist products that are offered. Finally, several strategies are designed, such as: Greater presence in digital channels with interactive content, promotions and advertising on food preparation, training service personnel, among others.
