La gastronomía ancestral y su influencia en el turismo cultural en el cantón Jipijapa de la provincia de Manabí.

Abstract

The Jipijapa Canton is recognized for its delicious gastronomy, which has been tried to be maintained from generation to generation, however, over the years this importance has been lost, giving rise to ignorance of ancestral dishes, for this reason, The research objective is: to analyze ancestral gastronomy and its influence on cultural tourism in the canton. The methodological design of this research includes the review of literature and official documents such as: (Ministry of Tourism, 2016), (OMT, 2008), (Heritage of the Ministry of Culture and Heritage, 2013), among others. Techniques such as: survey and interview are used, applying the instruments: questionnaire and technical sheet. Revealing the main results of the investigation that were: the identification of the main ancestral dishes of Jipijapa and the general analysis in relation to the study variables, ancestral gastronomy and cultural tourism, where he mentions that ancestral gastronomy is not influencing the development of cultural tourism in the canton. It was possible to meet each of the specific objectives where the theoretical words, the identification of the indicators, the ancestral dishes and the influence that exists between the ancestral gastronomy in the development of cultural tourism in the Jipijapa canton were identified. Thanks to the present investigation, it has been concluded that it is necessary to strengthen, store and disseminate the ancestral cultural and culinary knowledge that the ancestral gastronomy of the Jipijapa canton has, to offer and promote our roots and cultural identity.
