Resumen : Currently, the production of canned tuna and sardines has increased due to the high demand for these products; therefore, the food industry needs to carry out permanent controls and diagnosis of the production processes to guarantee the quality and safety of the final products. The general objective of this work was to develop a diagnosis of the production process in the company Envasur S. A. in order to obtain a higher productivity, for this purpose I propose a methodology with a qualitative approach of descriptive type, as an instrument a structured interview of 17 questions, applied to the four production managers and supervisors. Among the results it was found that the current situation of the production processes in the company affect productivity, finding that they have a planning as well as a quality control in all stages from the reception to the storage of the final product, however, there are restrictions that affect as the shortage of raw materials, deficiencies in the maintenance of machinery, which generates failures and delays in production. It is concluded by means of an improvement proposal that is structured through strategies and actions to guarantee the availability of raw material, maintain the machinery in optimal condition for its correct operation, contribute to teamwork, leadership and problem solving.
Descripción : En la actualidad la producción de enlatados de atún y sardinas ha incrementado por la alta demanda de estos productos, por ello la industria alimenticia necesita realizar controles y diagnostico permanentes a los procesos de producción para garantizar la calidad y seguridad de los productos finales.
