dc.descriptionEl presente estudio analiza la prefactibilidad para producir harina de café a partir de residuos del procesamiento del café, alineándose con los principios de sostenibilidad y economía circular planteado. En Ecuador, la industria cafetalera genera importantes cantidades de subproductos, como la pulpa y la cascarilla, que usualmente se desaprovechan. La transformación de estos residuos en harina no solo constituye una solución ambiental al reducir la contaminación, sino que también representa una oportunidad económica al introducir un producto con alto valor agregado y demanda potencial en mercados.es
dc.description.abstractThis study analyzes the pre-feasibility of producing coffee flour from coffee processing residues, aligning with the principles of sustainability and circular economy. In Ecuador, the coffee industry generates significant amounts of by- products, such as pulp and husks, which are often underutilized. Transforming these residues into flour not only provides an environmental solution by reducing pollution but also represents an economic opportunity by introducing a high-value product with potential demand in various markets. Below, a summary of the most significant results is presented, supporting the project's feasibility from economic, technical, social, and environmental perspectives. For the analysis, surveys were conducted, and financial methods were applied, determining an Internal Rate of Return (TIR) of 40.12%, a Net Present Value (VAN) of $23,704.65, and an estimated investment recovery time of 2.75 years. These financial results demonstrate the project's potential profitability. The study also included a technical analysis of the transformation process, evaluating key stages such as drying, grinding, and sieving to ensure an efficient and sustainable procedure. Additionally, production costs were identified and analyzed in relation to Ecuadorian market prices, plant capacity, and target market, concluding that it is feasible to offer a competitively priced product.es
