Se implementó un Chi Cuadrado con 4 tratamientos: T1: 75 % Balanceado - 25% Eisenia foetida; T2: 50 % Balanceado - 50% Eisenia foetida; T3: 25 % Balanceado - 75% Eisenia foetida; T4: 100% Balanceado, con 12 repeticiones a una edad de 60 días.es
dc.description.abstractPoultry farming has developed an extensive program focused on diversifying poultry production in an alternative way, promoting the breeding of birds for the production of eggs and meat in backyard conditions for family consumption. In this research, the acceptability of the organoleptic characteristics of pastured free-range chickens with balanced diets and Californian red worm was evaluated. A Chi Square was implemented with 4 treatments: T1: 75% Balanced - 25% Eisenia foetida; T2: 50% Balanced - 50% Eisenia foetida; T3: 25% Balanced - 75% Eisenia foetida; T4: 100% Balanced, with 12 repetitions at an age of 60 days. To carry out the sensory analysis, the breasts were selected, which were seasoned with garlic and salt before being grilled. A total of fifty samples were evaluated through surveys (50 samples per treatment), with the participation of fifty panelists. Each treatment was rated on a 5-point scale, where 1 corresponded to the lowest rating and 5 to the highest. For the bromatological analysis, a completely randomized design (DCA) was used, analyzing 3 breasts from each treatment. It was concluded that there are significant differences in the treatments of chickens fed with balanced diets and Eisenia foetida. Some treatments showed higher averages in characteristics such as residual flavor and texture. It should be noted that, in terms of fats, treatment 4 showed the highest average.es
