Gastronomía ancestral y su influencia en el turismo cultural del cantón Portoviejo, año 2022.

Abstract

The present work entitled "Ancestral gastronomy and its influence on cultural tourism in Portoviejo Canton, year 2020" is a research project that was conducted with the purpose of analyzing the cultural value of the ancestral gastronomy of Portoviejo Canton, determining its influence on the tourism sector and highlighting important aspects for a better potentialization, For this, it was necessary the help of several research instruments such as the bibliographic review where several important aspects are detailed around the ancestral gastronomy as an intangible good that highlights its value and cultural identity and also details the gastronomic heritage that Portoviejo has, all this in order to have a better understanding; another tool that was used was the qualitative and quantitative epistemology, in which through surveys it was possible to determine the cultural and gastronomic value that the city has, to achieve good results the surveys were directed to 121 respondents, who expressed their opinion on the subject through 10 multiple choice questions in relation to the ancestral gastronomy of Portoviejo; In addition, it is supported by the comments of two gastronomic experts to whom an interview was conducted, the topic was deepened and the most relevant data of the six questions that were raised in the course of the interview was noted, concluding the project concludes that gastronomy contributes significantly to the cultural value of the canton of Portoviejo and therefore helps the creation of new tourist offers that increase the economic sector of the city, and that, for a good tourism development is necessary immediate intervention in the area in a modern way without neglecting the traditional touch of Portoviejo.
