Extracción de azúcares de cinco variedades de camote (Ipomoea Batatas) de la provincia de Manabí mediante difusión.

Abstract

The objective of this research work was to determine the yield of sugars in five sweet potato varieties (Ipomoea batatas) in the province of Manabí through diffusion. The sugar extraction process was carried out in the bromatology laboratory of the Polytechnic Agricultural School of Manabí. The results indicated that the treatment with the variety CC-89-213 gave a higher yield of sugars, the same one that presented low values in sucrose 0.11% and glucose 0.07%, while, in fructose it showed a null value, said parameters were determined in the Chemical Excellence laboratory - UBA of the city of Guayaquil. The physical parameters were pH and ° Brix; The Pedrito variety obtained the highest value with a 6.25 in pH and the Toquecita variety had a higher content of soluble solids with a 12.83 ° Brix, whose analyzes were performed in the Process, Analysis and Research laboratory of the Lay University Eloy Alfaro de Manabí, their values were similar according to other research carried out. It should also be noted that the bagasse of the CC-89-213 variety was determined fiber, obtaining a result of 3.63%.
