dc.description.abstract | This project focuses on the construction of a traditional Manabi hut equipped with a wood-burning oven, intended for the gastronomy course of the Pedernales Extension of the Eloy Alfaro Lay University of Manabi. The initiative arises from the need to provide students with a learning space that allows them to experiment with the ancestral culinary techniques of the region as indicated in its research question, posing the research question: Will the implementation of the infrastructure for the operation of the Manabi oven improve the practices in the gastronomy course of the Pedernales Extension? Regarding the research methodology, it was based on the deductive method and the observation technique. Regarding the results, prior to construction, a detailed study of the design and materials of the traditional huts was included, as well as the selection of the most suitable guadua cane supplier through a market study. In conclusion, the hut was built using traditional techniques, which blends perfectly into the surroundings and offers a unique learning space, thus becoming a living culinary laboratory, where students can develop new cooking techniques. This project not only strengthens the academic training of students, but also contributes to the promotion of gastronomic tourism and local development, promoting the revaluation of Manabi culture. | es |
