Resumen : | This work aims to analyze the importance of keeping traditional Manabí pastries alive and their significance as part of Ecuador's Cultural Heritage, in order to avoid, as far as possible, the loss of the cultural identity of the Manabí people that so characterizes them. Traditional Manabí pastries are rich in ancestral knowledge, as the recipes have been passed down orally through generations and have transcended time through written recipes containing methods and techniques from the coastal region. For this reason, this project seeks to promote and preserve this cultural heritage, even though it is threatened by certain challenges to its continuity. Theoretical and empirical methods were used to validate this work, in addition to a series of interviews and surveys with community members from the Bahía de Caráquez and San Vicente sectors, who belong to the traditional pastry niche. All with the aim of gathering sufficient information for a proposal that would contribute to the appreciation, promotion, and safeguarding of traditional Manabí pastry recipes. The reflection of Manabí's identity and history reflects the way of life of one of the regions richest in customs and traditions. Thus, the promotion and incentive for the revaluation of pastries leads us to keep alive those writings and oral expressions that so capture our attention, so that we can taste them. |
Descripción : | El presente trabajo pretende analizar la importancia de mantener viva la repostería tradicional manabita y su importancia como parte del Patrimonio Cultural del Ecuador, para evitar en lo posible la pérdida de la identidad cultural del pueblo manaba que tanto les caracteriza. La repostería tradicional manabita tiene un gran conocimiento ancestral, debido a que las recetas han sido transmitidas en sus generaciones de manera oral y han transcendido en el tiempo por medio de las recetas escritas que contienen métodos y técnicas de la región costera |
