Métodos de elaboración de chifles de plátano sobre el rendimiento de la materia prima.

Abstract

This research work was developed in the chifle production company “Las Vainitas”, located at km 42 of Vía Chone, Cantón “El Carmen”- Manabí, the main objective of this work was to evaluate the production methods of banana chifles, on the performance of the raw material. This study used a completely randomized design (DBCA), focusing on evaluating how different cutting methods (Round, Long and Semi-Long) affect the final weight of the chifles, the waste generated and the production performance, where 3 treatments and 4 repetitions were used and the following variables were analyzed: final weight kg, pulp weight kg, actual yield, waste weight in kg and waste percentage. Although no significant differences were found in the actual yield of the chifles, the "Semi Long" treatment presented the highest yield with 30.17%.
