dc.description.abstract | The present research study aimed to analyze the historical value, cultural importance, gastronomic and economic relevance of traditional coladas from southern Manabí, taking into account their influence on social interactions and their passage through generations. To do so, a bibliographic review was carried out in relevant academic sources and mixed research methods were used. Data collection included the application of 102 structured surveys, designed around three dimensions: historical value, cultural importance and gastronomic and economic relevance. In addition, four interviews were conducted with older adults in the region, who shared knowledge about the traditional preparation of coladas and reflected on their continuity in new generations. The results showed that traditional coladas represent a significant element of the cultural heritage of southern Manabí, highlighting their importance in local festivities and in the preservation of ancestral culinary practices. However, the interviews revealed that the transmission of these practices to new generations faces challenges due to the influence of modernity and changes in eating habits. The interviewees agreed on the need to promote activities such as workshops and gastronomic festivals to revitalize these traditions and ensure their continuity, especially among the new generations. In conclusion, this study sought to highlight the need to implement cultural and educational strategies that promote the preservation of these culinary traditions, recognizing their value as historical, cultural and gastronomic heritage of the community. | es |
